Keto Waffles – At the top of my favorite food list, many breakfast foods ranks, the only problem is… I’m not a morning person. So too often at our house, big breakfasts elaborate, especially during the week. To enjoy all those delicious breakfast foods dinner gives me the opportunity that I love and a more reasonable hour in which to make them.

When it comes to brinner one of our favorites is these amazingly delicious Ham and Cheese KetoWaffles. These things are crazy good. When I told them I was making ham and cheese waffles even my family was a little skeptical, but one bite and they were hooked. I think for me, it’s that whole salty and sweet thing – against the sweet syrup the salty delicious ham and cheese. If syrup isn’t quite your thing babies are also super yummy with a runny yolk egg perched on top.

Points to remember to make Keto Waffles Moist !!

It really makes a difference so don’t skimp on the butter! During cooking leaving water will evaporate you with a dry mess. Butter makes everything better. Substitute with a tablespoon of butter on top if you’ll be omitting the fried egg on top.

Speaking of the egg, add even more moisture to the waffles leaving the yolk nice and runny. It’s a good thing!
When folding in your egg whites be gentle. Being too rough and deflating the egg whites is a common mistake causing a denser and tougher waffle.

Do NOT overcook your waffles! Overcooked waffle is a sad waffle if you can have the best batter in the world. Take care to cook only until it’s lightly golden. Ingredients

  • 1 tsp baking powder
  • 4 large eggs
  • 2 scoops unflavored whey protein powder, about 62 grams
  • 1 oz. ham steak, finely chopped
  • 6 tbsp melted butter
  • 1/2 tsp sea salt
  • fresh basil
  • 1 oz. cheddar cheese, grated
  • paprika

Instructions

  1. Into two mixing bowls start by separating 2 large eggs. Into the bowl add the protein powder, with the egg yolks, baking powder, sea salt and melted butter. Whisk to combine.
  2. Add the grated cheddar cheese and finely chopped ham steak bits to the egg yolk mixture and fold them in.
  3. With an electric hand, mixer, whisk the 2 egg whites and a pinch of salt until stiff peaks form. Into the egg yolk mixture gently fold in half the stiff egg whites. Be very gentle try not to let the egg yolk deflate. Once the egg yolks have aerated a bit fold in the other half.
  4. To a well-greased waffle maker add 1/4 cup of batter and cook according to manufacturer's instructions. For about 3-4 minutes each cook the waffles on medium heat until they're lightly golden. Even once it's out of the waffle maker the residual heat will continue to cook the waffle.
  5. Fry the remaining two eggs while they're cooking. Stack the waffles into two servings and with a fried egg top each one. Sprinkle some fresh herbs and paprika and if you'd like (basil, green onion, parsley, etc.). Enjoy!
