This Keto onion rings with a gorgeous coating come out of the oven – delightfully breaded and bright orange (thanks to paprika!).

The natural sweetness of the onion smothered is the perfect combination of flavorful Cajun coating. One thing – everyone’s oven is a little different, so you can reduce the baking time by a few minutes if you want to make sure they get crispy and put them under the broiler for a minute or two at the end.

As they cool the onion rings do soften, so they are best eaten right away. Don’t worry, once you try them that won’t be a problem! At our house, It’s definitely not an issue. Every time I make these, my mom always asks me why I didn’t make more.

Individually dipping each ring into the eggs and then the Cajun coating is the most time-consuming part of making these Keto onion rings. It’s incredibly easy, but to do each one, takes a little time. I promise!

Ingredients

  • 1 medium white onion
  • 2 large eggs
  • 1/2 cup Coconut Flour
  • 2 oz Pork Rinds
  • 1 tbsp Heavy Whipping Cream
  • 1/2 cup grated parmesan cheese

Instructions

  1. Slice onion in half-inch thick rings.
  2. Break apart rings and the pieces you won't be using set aside.
  3. Use three different bowls to make a coconut flour, heavy whipping cream, and egg wash and pork rind parmesan coating stations.
  4. Go through all the steps of coating, starting with coconut flour and place on baking rack.
  5. Double back and recoat them once all onions are coated, starting with the egg wash.
  6. TIP: If it begins soggy/clumpy, reprocess or remake the pork rind parmesan coating
  7. On greased baking rack place double coated rings and place in 425-degree oven for 15 minutes.
  8. Serve warm and enjoy!
