Keto Egg Roll Wrappers – Important Notes

  • Xanthan gum is the main ingredient and a must in this recipe, without this the dough will not elastic enough to roll and it will break apart while rolling.
  • You can use a food processor or hand to mix and knead the dough very well until a dough forms.

  • Make sure to roll the dough carefully, if they are too thin, they will break after adding dilling, if too thick it will not taste that good, so 1/8 inch thick or less is perfect
  • You can also make the dough ahead of time, pack them in a tightly sealed container and refrigerate for upto 1-2 day.

Total Time 45 minutes

  • 1/4 lb ground chicken (or ground pork or turkey)
  • 1/3 cup cabbage, finely shredded
  • 3 tbsp carrots, thinly sliced
  • 1/2 tbsp sesame oil
  • 3/4 tbsp soy sauce, low sodium
  • 1/4 tsp white pepper, ground
  • 2 tbsp water
  • oil for frying

For the wrappers

  1. In a food processor, add coconut flour, almond flour, salt, baking powder, and xanthan gum. Pulse a few times until well mixed. Use your hand to mix everything if a food processor is not available.
  2. In a small bowl, beat the egg and whisk. Add the egg, apple cider vinegar, and water to the food processor. Mix until dough forms (or knead until dough forms).
  3. Remove dough from the food processor, wrap with a plastic wrap and refrigerate for about 10-20 minutes. By this time, the dough should still be pliable and no longer be sticky.
  4. Take two sheets of parchment paper, place the dough ball and roll out thinly (about less than 1/8 inch thick).
  5. Cut dough into squares (4x4 inch). Roll the dough scraps again to make more wrappers (about 10 wrappers)

For the filling

  1. Heat a skillet over medium-high heat. Add ground chicken, shredded cabbage and carrots. Stir cook until chicken is tender everything is just about to cook.
  2. Add in white pepper, soy sauce, and water to the skillet and mix until well combined with the filling. Remove and set aside.

Wrapping Eggrolls

  1. Place 1 tbsp of filling into the center of the wrapper and fold as per your expertise.
  2. Make sure to fold the bottom, left, and right corners so that the filling should be intact and the wrapper is sealed.

Frying Eggrolls

  1. Heat a pot over medium high heat and add about 1 inch of oil deep.
  2. Add eggrolls (2-3 at a time), and cook until golden brown on all sides. Serve eggrolls immediately with your favorite dipping sauce.

  1. Do you need to use the wrappers immediately after making them or can the wrappers be prepared a day ahead of when you want to use them? And they can be made ahead, what is the best way to store them? Thanks so much!

  2. I made them and they taste really good, my family approved it to be added to our regular menu, it’s actually not hard to make, but follow the ingredients and measurements carefully, if the dough gets to dry, damp your fingers with water and knead the dough and it will soften, if is to sticky do the same but with the almond flour instead of water, I didn’t let it rest in the refrigerator, I use it right away, also I used a tortilla press instead of rolling the dough. Last thing, make doble the filling if you like the rolls fuller.
