Quite often too we just enjoy tuna salad stuffed tomatoes for dinner, our whole family loves it, whether made into salads or in casseroles. This time of year, we love to accompany our tuna salad when the tomatoes are perfectly red and ripe and homegrown. So, I thought to myself, If I combine Caprese and tuna salad and make one stellar salad?

It takes less than 10 minutes absolutely requires no cooking and to whip up very little culinary ability.
However, to turn on the oven in July and August it can be slightly unpleasant, so for no-cook recipes, I am ever on the quest. And for a fuss-free, I’m also always in the market for quick recipe Who doesn’t want that?! It will be ready in less than 10 minutes.

Then these Tuna Salad Stuffed Tomatoes are perfect for you. I love slow-cooked, good comforting, meal just as much as the next girl, but I’m not looking to spend too much extra time in the summer in my teeny tiny kitchen without windows.
After I polished off my second batch of Caprese Lentil Salad I accidentally stumbled across this idea. I wanted a quick meal that had those delicious flavors of mozzarella, balsamic vinegar, basil, and tomatoes. I also wanted something that will keep me full with high protein.

Tuna Salad Stuffed Tomatoes

Ingredients

  • 1 tbsp chopped green onion
  • 1 medium tomato
  • 1 tbsp chopped mozzarella {1/4 oz.}
  • 1 5oz can tuna, very well drained
  • 2 tsp balsamic vinegar
  • 1 tbsp chopped fresh basil

Instructions

  1. Cut the 1/4-inch top of the tomato. To scoop out the insides of the tomato, use a spoon and while you make the tuna salad set aside.
  2. Stir together the balsamic vinegar, drained tuna, mozzarella, green onion, and basil. In the hollowed out, tomato put the tuna salad, and enjoy!
