It doesn’t get much easier that chill, mix, eat. An easy and quick low carb cookie recipe that is sure to be kid and spouse approved.

As a child, I remember a neighbor making awesome cookies and it was always such a treat. Sometimes she made them with crunchy chow mein noodles and other times with oatmeal. My favorite – The chocolate butterscotch chow mein version, and it always felt like an extra special treat since I only had them on special occasions. I can almost taste them right now.

With this low carb no bake cookie recipe, to give it that familiar no bake cookie crunchy texture I used unsweetened desiccated coconut. You can buy unsweetened coconut flakes If you can’t find unsweetened desiccated coconut, and pulse them in a high powered food processor or a blender to get the desired size.

Low carb cookies without artificial sweeteners!

People are always asking what alternatives to desserts and snacks they can have since switching to the keto way of eating. Unfortunately, it can be hard to get used to the flavor of all natural sweeteners and cut back refined sugar.

Ingredients

  • 2 tablespoons real butter
  • 4 drops of vanilla stevia or sweetener of your choice
  • 2/3 cup all natural peanut butter or your choice of nut butter
  • 1 cup unsweetened all natural shredded coconut
  • Note* if using a granulated sweetener add it to the butter when microwaving to melt.

Instructions

  1. Melt butter in the microwave.
  2. Stir in peanut butter.
  3. Add coconut and sweetener. Mix well.
  4. Spoon onto a sheet pan.
  5. Freeze for 5-10 minutes.
  6. Store in the refrigerator bagged.
