  • 2 cups heavy cream, divided (1/4 cup and 1 3/4 cup)
  • 1 1/2 tsp gelatin powder, unflavored
  • 1/3 cup powdered erythritol
  • 1/4 cup cocoa powder
  • 1/4 tsp sea salt
  • 2 tsp vanilla extract


  1. Take a small bowl, add 1/4 cup heavy cream, add gelatin powder on top and whisk together. Set aside.
  2. In a medium saucepan, stir the remaining powdered sweetener, cocoa powder, heavy cream, and sea salt.
  3. Heat on medium-low and whisk constantly, until smooth and bubbling for about 5 minutes.
  4. Remove from the pan from the heat and stir in the vanilla extract.
  5. Add the gelatin and whisk until smooth and dissolved.
  6. Let it cool for about 10 minutes, if there's any film forming on the top, whisk again.
  7. Cover with plastic wrap, and make sure that it touches the top surface of the pudding to prevent a film from forming.
  8. Refrigerate for at least 2-3 hours or overnight.
  9. Enjoy!
