Ingredients

  • 12 eggs
  • 1 cup cooked bacon, crumbled (5-6 slices)
  • 1/2 cup fresh spinach, finely chopped
  • 1/3 cup mushrooms, chopped (button mushrooms)
  • 1/2 medium red pepper, chopped
  • 1/2 cup onion, chopped
  • 1/2 medium green pepper, chopped
  • 1/2 cup cheddar cheese, shredded (smoked cheddar cheese works great)
  • 1/2 cup mozzarella cheese, shredded
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, beat the egg, add salt and pepper and whisk the eggs.
  3. Grease the muffin tin (12 capacity) or silicone muffin mold liners with little olive oil.
  4. Pour the egg mixture into each tin, about halfway through each.
  5. In another bowl, add bacon, peppers, onions, and mushrooms. Combine well and add them to each of the tins.
  6. Top with the mozzarella and cheddar cheese.
  7. Place the muffin tin on the preheated oven and bake for about 14-16 minutes or until the eggs are set.
  8. Remove the tray from the oven and let them cool completely before serving.
